Raw Carrot Dip

4 carrots, washed & trimmed
1/4 cup olive oil
1 tsp crushed garlic
pinch sea salt
1/2 cup raw cashews
1/4 cup lemon juice
1 tsp ground cumin

Soak cashews overnight in water then drain.
Blend all ingredients together to desired consistency.
Serve with vegies and crackers, if desired.
